Tomato Soup for Weight Loss

Ingredients
- 4 large tomatoes, chopped
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- Salt and pepper to taste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
- Add the chopped tomatoes, dried basil, dried oregano, salt, and pepper. Cook for about 10 minutes, stirring occasionally until the tomatoes start to break down.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let simmer for 20 minutes.
- Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches, blend until smooth, and return to the pot.
- Adjust seasoning if necessary, and simmer for an additional 5 minutes.
- Serve hot, garnished with fresh basil leaves if desired.
