Garlic and Lemon Grilled Chicken

Ingredients
- 1 whole chicken (about 3-4 pounds)
- 4 tablespoons olive oil
- 6 cloves garlic, minced
- Juice of 2 lemons
- Zest of 1 lemon
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Fresh parsley for garnish
Instructions
- In a mixing bowl, combine olive oil, minced garlic, lemon juice, lemon zest, salt, pepper, oregano, and paprika to create a marinade.
- Place the chicken in a large resealable bag or a bowl and pour the marinade over it. Ensure that the chicken is well-coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.
- Preheat your grill to medium-high heat. If using charcoal, ensure the coals are evenly distributed and glowing before placing the chicken on the grill.
- Remove the chicken from the marinade and let any excess marinade drip off. Discard the leftover marinade.
- Place the chicken on the grill, breast side down, and grill for about 15-20 minutes. Flip the chicken and continue grilling for another 20-30 minutes, or until the internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the grill and let it rest for about 10 minutes before carving.
- Garnish with fresh parsley and serve with your favorite sides.
