Stuffed Zucchini for Diabetics
Stuffed zucchini is a flavorful and healthy dish that caters to the dietary needs of individuals with diabetes. This recipe provides a nutritious alternative that is low in carbohydrates and high in fiber, ensuring a satisfying meal without the risk of spiking blood sugar levels.
Ingredients
- 4 medium zucchinis
- 1 cup of ground lean turkey or chicken
- 1/2 cup of cooked quinoa or brown rice
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 cup of diced tomatoes (fresh or canned)
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of dried oregano
- 1/2 cup of grated low-fat cheese (optional)
- Fresh parsley or basil for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Wash the zucchinis and cut off the tops. Carefully hollow out the insides using a spoon, leaving about 1/4 inch of flesh to maintain the shape.
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the ground turkey (or chicken) to the skillet, stirring until fully cooked. Mix in the cooked quinoa (or brown rice), diced tomatoes, salt, pepper, and oregano.
- Stuff each zucchini with the mixture, pressing down gently to pack it in. If desired, sprinkle the grated cheese on top.
- Place the stuffed zucchinis in a baking dish and cover with foil. Bake for 25-30 minutes, or until the zucchinis are tender.
- Once ready, remove from the oven and let it cool slightly. Garnish with fresh parsley or basil before serving.
