Delicious Boiled Potato Filling for Samosas

Ingredients
- 4 medium-sized potatoes
- 1 medium onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves, chopped
- Juice of 1 lemon
Instructions
- Start by boiling the potatoes until they are fork-tender. Allow them to cool, then peel and mash them in a bowl.
- In a pan, heat the oil over medium heat and add the cumin seeds. Let them sizzle for a few seconds.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the green chilies and sauté for another minute.
- Add the mashed potatoes to the pan along with garam masala and salt. Mix well to combine.
- Remove from heat and stir in chopped coriander leaves and lemon juice.
