How to Make Kofta with Tahini and Rice

Ingredients
- 500g ground beef or lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup parsley, finely chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- For the tahini sauce:
- 1/2 cup tahini
- 1/4 cup lemon juice
- 1 garlic clove, minced
- Water to thin the sauce
- For the rice:
- 1 cup rice
- 2 cups water
- Salt to taste
- 2 tablespoons olive oil
Instructions
- In a large mixing bowl, combine ground meat, chopped onion, minced garlic, parsley, cumin, paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.
- Shape the mixture into oval patties, ensuring they are of uniform size for even cooking.
- Heat a grill or skillet over medium heat. Cook the kofta patties for about 5-7 minutes on each side, or until they are browned and cooked through.
- Meanwhile, prepare the tahini sauce by whisking together tahini, lemon juice, and minced garlic in a bowl. Gradually add water until you reach your desired consistency.
- For the rice, rinse it under cold water until the water runs clear. In a pot, heat olive oil over medium heat, add the rice, and sauté for a couple of minutes. Add the water and salt, bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed.
- Serve the kofta warm over a bed of rice, drizzled with tahini sauce.
