Kebab with Rice and Pistachios
This delicious dish combines tender kebabs with fragrant rice and the delightful crunch of pistachios, making it a perfect meal for gatherings or special occasions.
Ingredients
- 500g ground meat (beef or lamb)
- 1 cup rice
- 1/2 cup pistachios, shelled and chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh herbs (parsley or mint) for garnish
Instructions
- In a large bowl, combine the ground meat, chopped onion, minced garlic, ground cumin, ground coriander, salt, and pepper. Mix well until all ingredients are thoroughly incorporated.
- Form the mixture into kebab shapes, either on skewers or as patties.
- Heat olive oil in a large skillet over medium heat. Add the kebabs and cook for about 10-12 minutes, turning occasionally, until browned and cooked through.
- Meanwhile, rinse the rice under cold water until the water runs clear. In a pot, add 2 cups of water and bring it to a boil. Add the rice, cover, and reduce heat to low. Simmer for about 15-20 minutes or until the rice is tender and the water is absorbed.
- Stir in the chopped pistachios into the cooked rice, mixing evenly.
- Serve the kebabs warm alongside the pistachio rice and garnish with fresh herbs.
