Healthy Date and Oat Dessert without Oven
This delicious healthy dessert combines the natural sweetness of dates with the nutritional benefits of oats, making it a perfect treat that requires no baking!
Ingredients
- 2 cups of pitted dates
- 1 cup of oats
- 1/2 cup of almond butter or any nut butter
- 1/4 cup of honey or maple syrup
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of cinnamon (optional)
- Pinch of salt
- Chopped nuts or coconut flakes for topping (optional)
Instructions
- In a food processor, add the pitted dates, oats, almond butter, honey (or maple syrup), vanilla extract, cinnamon (if using), and a pinch of salt.
- Process the mixture until it forms a sticky dough. You may need to scrape down the sides a couple of times.
- Once the mixture is well blended, transfer it to a lined baking dish or tray.
- Press the mixture evenly into the dish to create a flat surface. You can use a spatula or your hands.
- If desired, sprinkle chopped nuts or coconut flakes on top and gently press them into the mixture.
- Cover the dish and place it in the refrigerator for about 1-2 hours to set.
- Once set, cut into squares or bars and enjoy your healthy dessert!
Storage Instructions
This dessert can be stored in an airtight container in the fridge for up to one week. You can also freeze the bars for longer storage.
