1 cup all-purpose flour

2 teaspoons baking powder

1 cup milk
1 large egg

Instructions
In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
In another bowl, whisk together the milk, egg, and melted butter (and vanilla or cinnamon if using).
Pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Repeat with the remaining batter, adjusting heat as necessary to prevent burning.
