Fresh Green Bean Maqluba

Ingredients
- 2 cups of fresh green beans, trimmed
- 1 cup of basmati rice
- 500 grams of chicken or lamb, cut into pieces
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- Salt and pepper to taste
- 4 cups of chicken or vegetable broth
- 2 tablespoons olive oil
- Fresh herbs for garnish (parsley or coriander)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, and continue to sauté for another 1-2 minutes until fragrant.
- Incorporate the meat into the pot, adding the ground cumin, ground coriander, turmeric, salt, and pepper. Cook until the meat is browned on all sides.
- Layer the fresh green beans over the meat mixture, followed by the rice, ensuring an even distribution.
- Carefully pour the broth over the rice layer, ensuring that it is fully submerged.
- Bring the pot to a boil, then cover and reduce the heat to a simmer. Let it cook for about 30-40 minutes, or until the rice is tender and liquid is absorbed.
- Once cooked, remove from heat and let it sit for 10 minutes before flipping it onto a serving platter.
