Emirati Ghozi: A Traditional Culinary Delight
Ghozi is a popular Emirati dish known for its rich flavors and aromatic spices. It reflects the cultural heritage of the UAE, making it a staple at gatherings and celebrations.
Ingredients
- 1 kg of lamb or chicken, cut into pieces
- 2 cups of rice (preferably basmati)
- 4 cups of water
- 1 large onion, chopped
- 2 tomatoes, diced
- 4 cloves of garlic, minced
- 1 tsp of ground coriander
- 1 tsp of ground cumin
- 1 tsp of turmeric powder
- 1 stick of cinnamon
- 3 cardamom pods
- Salt and pepper, to taste
- Fresh parsley or cilantro for garnish
- 3 tablespoons of vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until golden brown.
- Stir in the minced garlic, tomatoes, ground coriander, cumin, and turmeric. Cook for about 2-3 minutes until fragrant.
- Add the pieces of lamb or chicken to the pot, seasoning with salt and pepper. Sear the meat until browned on all sides.
- Pour in the water and add the cinnamon stick and cardamom pods. Bring to a boil, then reduce the heat and cover, cooking for about 30-40 minutes until the meat is tender.
- Remove the meat from the pot and set aside. Strain the broth and return it to the pot.
- Add the rice to the broth, adjusting salt as needed. Cook until the rice is fluffy and the liquid is absorbed, about 15-20 minutes.
- Fluff the rice and stir in the reserved meat. Let it sit covered for a few minutes before serving.
- Garnish with fresh parsley or cilantro before serving.

Ghozi is best served warm, accompanied by a side of yogurt or a fresh salad. It’s a perfect meal for family gatherings and festive occasions.
