Easy Swiss Roll Cake Recipe

- 4 large eggs
- 100g (1/2 cup) granulated sugar
- 100g (3/4 cup) all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
- 50g (1/4 cup) unsalted butter, melted
- 1 teaspoon vanilla extract
- Jam or whipped cream for filling
- Powdered sugar for dusting
Instructions
- Preheat the oven to 180°C (350°F). Line a baking sheet (30×40 cm) with parchment paper.
- In a large mixing bowl, beat the eggs and sugar together until the mixture is pale and fluffy.
- In another bowl, sift together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture, being careful not to deflate the batter.
- Add the melted butter and vanilla extract, and mix until just combined.
- Pour the batter into the prepared baking sheet and spread it evenly.
- Bake in the preheated oven for 12-15 minutes, or until lightly golden and springy to the touch.
- Once baked, remove from the oven and let it cool in the pan for a few minutes.
- Turn the cake out onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
- Spread your choice of jam or whipped cream evenly over the surface of the cake.
- Starting from one edge, roll the cake tightly with the towel to form a log shape. Allow it to cool completely in this shape.
- Once cooled, unfurl the cake and place it on a serving plate. Dust with additional powdered sugar before slicing and serving.
