Kumpir with Chicken Filling
Kumpir is a delicious baked potato dish, popular in Turkish cuisine, which we will elevate by stuffing it with flavorful chicken. This recipe is perfect for a hearty meal or a delightful snack!
Ingredients
- 4 large potatoes
- 2 cups cooked chicken, shredded
- 1 cup cheddar cheese, grated
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Butter (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the potatoes thoroughly and poke a few holes in them with a fork. This prevents them from bursting while baking.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender.
- While the potatoes are baking, prepare the filling. In a bowl, combine the shredded chicken, cheddar cheese, sour cream, green onions, garlic powder, salt, and pepper. Mix well.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Then, slice each potato open lengthwise.
- Using a fork, gently fluff the insides of the potatoes and add butter if desired.
- Stuff the potatoes with the chicken mixture, ensuring each potato is generously filled.
- Return the stuffed potatoes to the oven for another 10-15 minutes, or until the tops are golden brown.
