Chicken Pie with Onions and Thyme

Ingredients
- 1 pre-made pie crust
- 500 grams of chicken breast, diced
- 2 large onions, sliced
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- Salt and black pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 10-15 minutes.
- Add the diced chicken to the skillet, season with thyme, salt, and black pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from heat and let it cool.
- Roll out the pie crust and fit it into a pie dish. Pour the chicken and onion mixture into the crust.
- Cover the filling with another layer of pie crust. Seal the edges and cut a few slits in the top crust to allow steam to escape.
- Brush the top with the beaten egg to achieve a golden color while baking.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
