How to Make Vegan Honey Cookies

- 1 cup almond flour
- 1/2 cup rolled oats

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, rolled oats, baking powder, and salt.
- In another bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. If desired, fold in the chopped nuts or dried fruits.
- Using a tablespoon, scoop the dough and roll it into balls. Place them on the prepared baking sheet, leaving some space in between.
- Flatten each ball slightly with the back of a fork or hand.
