Creamy Cheesecake Recipe

- 200g digestive biscuits
- 100g unsalted butter, melted
- 600g cream cheese, softened
- 150g sugar
- 200ml sour cream
- 3 large eggs
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 160°C (320°F).
- Crush the digestive biscuits into fine crumbs and mix them with the melted butter.
- Press the biscuit mixture firmly into the base of a springform pan to form a crust.
- In a mixing bowl, beat the cream cheese and sugar until smooth.
- Add the sour cream, eggs, and vanilla extract, mixing until well combined.
- Pour the cream cheese mixture over the prepared crust, smoothing the top.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly wobbly.
- Turn off the oven and leave the cheesecake inside for an hour, allowing it to cool gradually.
- After cooling, refrigerate for at least 4 hours or overnight.
