Fish and Vegetable Tray for Diabetics
This delicious fish and vegetable tray is not only healthy but also tailored for those managing diabetes. Combining a variety of vegetables with fish creates a nutritious meal that’s easy to prepare and satisfying.
Ingredients
- 500g of fresh fish fillets (such as cod or tilapia)
- 1 cup of broccoli florets
- 1 cup of zucchini, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 1 lemon, sliced
- Fresh parsley for garnish
Preparation Steps
- Preheat your oven to 200°C (392°F).
- In a large mixing bowl, combine the broccoli, zucchini, bell pepper, onion, and garlic. Drizzle with olive oil, and season with thyme, salt, and pepper. Toss well to coat the vegetables.
- In a baking tray, arrange the seasoned vegetables evenly.
- Place the fish fillets on top of the vegetables. Season the fish with salt, pepper, and a drizzle of olive oil. Lay lemon slices on top of the fish.
- Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and the vegetables are tender.
- Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
