Yogurt Cheesecake with Vimto

Ingredients
- 200g digestive biscuits
- 100g unsalted butter, melted
- 500g plain yogurt
- 200g cream cheese
- 100g sugar
- 1 teaspoon vanilla extract
- 200ml Vimto
- 2 tablespoons gelatin powder
- 100ml warm water
Instructions
- Crush the digestive biscuits in a bowl until finely ground. Mix in the melted butter until well combined.
- Press the biscuit mixture into the bottom of a springform cake pan to create a firm base.
- In another bowl, combine the yogurt, cream cheese, sugar, and vanilla extract. Mix until smooth.
- In a small bowl, dissolve the gelatin powder in warm water. Stir until fully dissolved, then add it to the yogurt mixture.
- Pour in the Vimto and mix everything until well incorporated.
- Pour the creamy mixture over the biscuit base in the pan and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Once set, carefully remove the cheesecake from the pan and slice to serve. Enjoy!
