Heba’s Cheesecake

Ingredients
- 200 grams of digestive biscuits
- 100 grams of melted butter
- 500 grams of cream cheese
- 200 grams of sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 200 ml of heavy cream
- Fresh fruits for decoration (optional)
Instructions
- Preheat the oven to 170°C (340°F).
- In a bowl, crush the digestive biscuits into fine crumbs, then mix in the melted butter until combined.
- Press the biscuit mixture into the bottom of a 9-inch springform pan to form a crust.
- In a large bowl, beat together the cream cheese and sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until smooth.
- Gently fold in the heavy cream until completely incorporated.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 45-50 minutes or until the center is set but still has a slight jiggle.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, top with fresh fruits if desired.
