Okra with Meat and Coriander Recipe

Ingredients
- 500 grams of okra, washed and trimmed
- 300 grams of meat (beef or lamb), cut into pieces
- 1 large onion, finely chopped
- 4 cloves of garlic, minced
- 2 medium tomatoes, chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt, to taste
- Black pepper, to taste
- 3 tablespoons of vegetable oil
- Water, as needed
- Fresh coriander, for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they are golden brown.
- Add the minced garlic and sauté for another minute until fragrant.
- Add the meat pieces to the pot. Season with salt, black pepper, and ground cumin. Cook until the meat starts to brown on all sides.
- Add the chopped tomatoes and ground coriander. Stir well and cook for about 5 minutes until the tomatoes soften.
- Pour in enough water to cover the meat. Bring to a boil, then reduce the heat and let it simmer for about 40 minutes, or until the meat is tender.
- Carefully add the okra to the pot, and mix gently. Let it cook for another 15-20 minutes until the okra is tender but not mushy.
- Taste and adjust seasoning as necessary. Remove from heat and garnish with fresh coriander before serving.
