Mini Pizza for Breakfast Without an Oven

Ingredients
- 2 cups of all-purpose flour
- 1 cup of warm water
- 1 tablespoon of instant yeast
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 2 tablespoons of olive oil
- 1 cup of tomato sauce
- 1 cup of shredded mozzarella cheese
- 1/2 cup of sliced bell peppers
- 1/2 cup of sliced olives
- 1/2 teaspoon of dried oregano
- Additional toppings as desired (ham, mushrooms, etc.)
Instructions
- In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
- Add the flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Divide the dough into small balls (about the size of a golf ball).
- Flatten each ball into a small circle about 1/4 inch thick.
- Heat a non-stick skillet over medium heat. Place the flattened dough in the skillet.
- Spread a tablespoon of tomato sauce over each mini pizza and sprinkle with mozzarella cheese and desired toppings.
- Cover the skillet with a lid and cook for about 8-10 minutes, or until the cheese is melted and the bottom is golden brown.
